Gluten intolerance is defined as the sensitivity to gluten. Gluten is group of proteins that are present in almost all the products made of wheat, rye and barley. If a body reacts to these gluten contained food products, it means that the body is intolerant to gluten. Gluten is present in high concentration in wheat, rye and barley. This allergy eventually leads to the inflammation and swelling of the internal lining of the small intestinal tract.
